Turkey Parmesan Meatballs

These meatballs are packed with lean protein and are bursting with flavor. They have the right balance of flavor to be super versalite – perfect on their own or doused in your favorite sauce. I always make a big batch because they are great as leftovers or weekly meal prepping and they freeze/reheat very well.

Ingredients
2 lbs ground turkey
2 eggs
1 medium onion minced, or ground
⅔ cup shredded parmesan 
1 ½  tsp salt
2 tsp dried basil 
2 tsp garlic powder
2 tsp dried oregano
2 tsp parsley 
1 tsp black pepper 
2 tsp fennel 
1 tsp red pepper flakes

Instructions
Preheat the oven to 400. Cover two baking sheets with parchment paper. In a large mixing bowl, beat your eggs using a large fork. Mix in all your herbs and spices followed by parmesan and onion. Lastly, add in the turkey, mixing until everything is evenly combined. 

Form or scoop the mixture into 2″ balls and place on your baking sheets. Bake for 20 minutes, flipping them about halfway through. Add an additional 5-8 minutes baking time if you prefer them golden brown and slightly crispy – my preference if I am not adding sauce.

Serving Suggestions
My favorite way to serve the meatballs is on their own as a meal or snack. I like to add a little bit of fresh basil and additional parmesan and pair them with green beans. They are also great in marinara, pesto or alfredo sauces with or without your favorite pasta. Easily reheat the next day in a microwave or air fryer. Or saute some peppers and onions and add to a squishy roll for a quick meatball sub.

Notes
-Feel free to adjust the herbs and spices according to what you like or have on hand. Fresh herbs can be used if available.
-I have used red, yellow and white onions as well as shallots and do not have a preference. I do like to grind the onion in the food processor so it just mixes right in, but if you like chunkier onions, go for it!
-If you don’t have shredded parmesan grated works well or you can use shaved if you make sure the pieces are not too big. If you want to leave out the parmesan altogether, consider adding an additional ½ tsp salt.
