This salad is everything a summer salad should be and more. It’s colorful, light and refreshing, full of flavor with a beautiful balance of salty, sweet and bitter. Plus, it’s super easy to put together.
Ingredients
Belgian endive
Fresh peaches
Ripe heirloom tomatoes
Fresh mozzarella
Fresh basil leaves
Prosciutto (optional)
Olive oil
Balsamic glaze
Salt and pepper
Instructions
Start with a bet of chopped or torn Belgian endive. Use red or green or a mix of the two. Radicchio or even Add sliced peaches, tomatoes and mozzarella. The mozzarella can originate at any size and you can even use pieces of burrata. For optimal mouthfuls, try to make sure the peach, tomato and mozzarella pieces are similar in size.
Optionals: add small, folded slices of prosciutto and any other lettuces you wish.
This recipe pairs nicely with just about any summer meal, but we like it will a simple grilled chicken or fish or anything with BBQ sauce. Enjoy!
